Abstract
This paper describes the educational use and potential of an acid phosphatase enzyme extracted from mung beans (Phaseolus aureus), which the author has used in A-level Biology teaching for over 20 years and in a series of workshops for teachers in the Science and Plants for Schools programme. Mung bean seeds are readily obtainable from health food shops or can be purchased as fresh 'bean sprouts' in most supermarkets. A wide range of enzyme properties can be investigated using an aqueous extract of germinating seeds, with a substrate that allows colorimetric measurement of rate and activity.
